Did You Eat Breakfast Today? 10 Fast, Easy Breakfast Options
I’ve been up for 2 hours and I just realized that I haven’t had anything to eat or drink yet. This is not unusual, but since I already walked the dogs and have settled in to work for the day, I probably wouldn’t have remembered that I skipped breakfast until my hands started shaking around lunch time and I started getting really irritable — because that’s what happens to me when I don’t eat enough.
Mornings are busy at my house, and I don’t even have to leave to get to work, so I can sympathize with those of you who work outside the home or are full-time moms. Here are 10 fast and easy breakfasts on days you just don’t have time to think about it.
- Breakfast casserole. Prepare it the night or weekend before and then just nuke a piece and enjoy! Here’s a recipe for a delicious ham and egg casserole.
- Applesauce and peanut butter waffles. Grab 2 Eggos or whatever you like, toast them, and slather the bottom one with peanut butter and the top with applesauce. Or, put peanut butter and apple sauce on both of them. Protein, fruit, grain, you’re rocking the food groups.
- Fruit smoothie, a million varieties. I like to combine calcium-fortified OJ, 1/4 cup of low-fat vanilla yogurt (because low fat has less sugar than fat free), a scoop of soy protein power, and a handful of frozen berries. Blend and enjoy!
- Yogurt and granola. You can purchase fruit yogurt and granola parfaits ready made at the grocery store or your local cafe, or you can just buy a few containers of yogurt and a box of granola and make it yourself. Add in the fruit (but not the juice) from a Dole fruit cup for extra deliciousness.
- Clif or Kashi Go Lean bar and a banana. I personally prefer Clif bars because of the awesome variety of flavors and the protein boost they pack, but both are handy.
- Carnation Instant Breakfast, Slimfast shake (powder + milk or in a can) and a piece of fruit. It’s cheaper to purchase the power and make a shake yourself with low-fat or skim milk.
- Bowl of cereal. Here’s an oldie but a goodie! Look for cereals with nuts and lots of protein and fiber to feel fuller longer, or add toppings to your old favorites. Beware of sugary cereals.
- Pancakes. If you use pancake mix, they take about 15 minutes to cook from making the batter to stuffing your face. Pre-make your mix and keep it in the fridge for added speediness.
- Peanut butter toast and a piece of fruit. Look for whole-grain bread for additional nutrients and a longer feeling of fullness.
- Salami and cream cheese on a bagel. I prefer it with an everything bagel because, well, mmmmm, it’s jut so tasty.

Hi Kristen,
Wow, lots of great ideas here. I’m generally not a big breakfast fan, despite all the zillions of articles supporting breakfast. I think it’s because I prefer salty stuff to sweet. But you have some great salty ideas here that I may just have to try.
And although I am a huge fan of peanut butter on waffles, I never once thought to put applesauce on them. Now, that is just simply brilliant! :) Thanks.

Anyone here old enough to remember that old cartoon commercial that tells kids that any breakfast is a good breakfast. I think oatmeal is the perfect breakfast. Not the kind that comes in packages but just plain old fasioned oatmeal that you make on the stove. Just don’t add a bunch of sugar to it!

Bill, I don’t remember that commercial, but I DO love oatmeal. I eat it several times a week — and the real kind, too, not those quick oats. Mmm, it’s so good with a touch of brown sugar, a little butter, and some milk.
